Tsukiji Sarashina no Sato — founded 1899, four generations of one family.
Founded in 1899 by Zenjiro Akatsuka. The Tsukiji branch was revived by the 3rd generation in 1967; the three-story reinforced-concrete building was completed in 1977. Since 2003 under 4th-generation owner Shigeyuki Akatsuka. In-house stone-milling of domestically grown buckwheat since 1990. 100% hand-made soba.

The Tsukiji premises were designed by the 2nd-generation owner himself and completed in 1977 — three storeys of reinforced concrete, south-facing, modest proportions. The building has never been remodelled. We still receive guests inside the same concrete and timber surfaces, exactly as they were poured.
Stone-milled in-house since 1990.
Since 1990 a stone mill has stood on the ground floor; the day's flour is ground from whole groats in front of the guest. All buckwheat is domestically grown. Sarashina — our signature — uses only the inner, whitest core of the groat.
